I made these fish cakes following a recipe from a new cookbook, the Poor Girl Gourmet. The angle on this cookbook is how to cook great food and eat well on a tight budget (around $15 to feed four people!). These fish cakes (made with fresh tilapia, capers, green olives, lemon zest and panko bread crumbs) were so light and fresh. MMMMM....delish. Can't wait to try the next recipe. Check it out:
